We are celebrating in our house today. One of my kiddos is turning 18. Parties all this week between her birthday and graduation. I better take my vitamins. We are having taco salad for dinner since we still have piano tonight and three lessons during the dinner hour. Have to make it easy so everyone can eat when they get a chance. Perfect for Cinco de Mayo too. Here's the recipe for Taco salad.

Taco salad is a good idea for eat as you go. When we had six at home and crazy schedules, I would make soft tacos in flour tortillas and they could heat them up in the microwave as needed. Some would eat early, some in between, and some late... It was a Wednesday night favorite.

I might make the taco salad this weekend. Trip and Shanley are going to the beach for an orthopedic surgeons' conference. Shelley is still in school so we are staying home!
